Grilled teriyaki vegetables with a smoky twist, a flavorful and simple side dish.
Ingredients:
  • 2 cups fresh broccoli florets
  • 10 baby carrots, halved lengthwise
  • 4 button mushrooms, sliced
  • 1 small zucchini, sliced into rounds
  • 1 tablespoon olive oil
  • 0.5 cup soy sauce
  • 0.5 cup white sugar
  • 0.25 cup apple cider vinegar
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon cornstarch
  • 2 teaspoons garlic powder
  • 1 teaspoon ginger paste
Instructions:
  • Get your outdoor grill ready by preheating it to medium-high heat and lightly oiling the grate. Also, preheat the side burner on the grill to medium heat.
  • In a large bowl, combine broccoli, carrots, mushrooms, and zucchini. Drizzle with olive oil and toss to coat the vegetables thoroughly. Transfer the mixture to a grill basket.
  • In a medium saucepan, whisk together soy sauce, sugar, vinegar, sesame seeds, cornstarch, garlic powder, and ginger paste until well combined. Cook on the side burner of the grill until the sauce begins to bubble, around 5 minutes. Lower the heat to simmer and let it continue to cook.
  • Grill vegetables for 15 minutes on preheated grill, flipping every 5 minutes. Pour teriyaki sauce over vegetables and mix thoroughly. Cook until tender, another 5 minutes.
