Grilled zucchini topped with tomato and mint for a refreshing side dish.
Ingredients:
  • 3 medium zucchini
  • 1 tablespoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 8 ounces cherry tomatoes, halved
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh mint
Instructions:
  • Heat your outdoor grill to high temperature and brush the grate lightly with oil.
  • Thinly slice zucchini lengthwise into planks. Brush the planks with olive oil and season with salt and black pepper. Arrange them on the grill without overcrowding.
  • Grill until tender and slightly charred, about 2 to 3 minutes per side, then move to a plate with raised edges.
  • Combine tomatoes, luxurious extra-virgin olive oil, apple cider vinegar, and fresh mint in a bowl. Gently crush some tomatoes to extract their flavors. Mix well and drizzle over sliced zucchini.
