Colorful pasta salad that will steal the show at any party.
Ingredients:
  • 1 pound tri-color rotini pasta
  • 0.5 cup water, divided
  • 5 drops red food coloring
  • 5 drops green food coloring
  • 5 drops blue food coloring
  • 5 drops yellow food coloring
  • 1 cup white sugar
  • 0.75 cup cider vinegar
  • 3 tablespoons dried parsley flakes, or to taste
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 1 small onion, grated
  • 0.5 green bell pepper, diced
  • 4 carrots, grated
Instructions:
  • Bring a large pot of salted water to a rolling boil. Cook the rotini for 8 minutes until al dente, then drain and rinse with cold water.
  • Place 2 tablespoons of water in each of 4 resealable plastic bags. Add red food coloring to one bag, green to another, blue to the third, and yellow to the last bag.
  • Add the rotini to the four bags and gently squeeze each bag to evenly distribute the color. Let it sit for about 10 minutes to fully saturate. Then, transfer the colorful pasta to a large bowl.
  • Combine sugar, vinegar, oil, parsley, salt, garlic powder, and pepper in a bowl and whisk until the sugar is fully dissolved into the dressing.
  • Combine the onion, green bell pepper, and carrots with the pasta. Drizzle the dressing over the mixture and toss well to coat. Chill in the refrigerator for a minimum of 2 hours to allow the flavors to meld together.
