Throwing a groovy retro bash? Make these vibrant cupcakes with Betty Crocker® cake mix for a funky treat!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • Betty Crocker™ gel food colors or paste food colors (red, orange, yellow, green, blue and purple)
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting
Instructions:
  • Preheat your oven to 350°F (or 325°F for dark or nonstick pans), and line 24 regular-size muffin cups with white paper baking cups.
  • Prepare cake batter according to the instructions on the box using water, oil, and eggs. Divide the batter evenly among 6 medium bowls. Add a unique food color to each bowl to create red, orange, yellow, green, blue, and purple batters. Spoon 1 level teaspoon of each colored batter into each muffin cup, layering the colors in rainbow order—red, orange, yellow, green, blue, and purple. Avoid stirring the batters. Each cup should be filled to about half full.
  • Bake for 17 to 23 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool for 10 minutes before removing them from the pans and transferring them to cooling racks. Let them cool completely for about 30 minutes.
  • Divide the frosting equally into 3 medium bowls. Color one bowl red, another yellow, and the last one blue using food coloring. Chill in the refrigerator for approximately 30 minutes.
  • Fill a 16-inch disposable decorating bag with a #6 star tip with spoonfuls of each color of frosting, alternating colors without mixing. Starting at 12 o’clock on the outer edge of each cupcake, pipe frosting in a clockwise motion for 3 rotations towards the center, finishing with a small peak. Store cupcakes loosely covered.
