Simplified stuffed cabbage casserole, a beloved family dish with all the flavors in less steps.
Ingredients:
  • cooking spray
  • 1 (28 ounce) can fire-roasted diced tomatoes
  • 2 pounds ground beef
  • 1 medium onion, diced
  • 2 (10.75 ounce) cans condensed tomato soup
  • 1 medium head cabbage, cored and thinly sliced
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a casserole dish with cooking spray.
  • Drain diced tomatoes in a colander over a bowl, saving the juice.
  • Heat a large skillet over medium-high heat. Brown and crumble the ground beef in the skillet for 5 to 7 minutes. Transfer to a large bowl and discard most of the grease from the skillet.
  • Cook the onions in the flavorful grease until soft and caramelized, approximately 15 minutes. Remove from heat and combine with the beef, drained tomatoes, and condensed soup. If needed, mix in a splash of tomato juice to achieve desired consistency.
  • Place the cabbage in the casserole dish, shaping it into a generous mound. Pour the savory beef mixture over it and seal with foil for baking.
  • Bake covered in the oven for 1 hour, then uncover and bake for another hour. Let cool for 20 minutes before serving hot.
