A flavorful Guatemalan rice side dish with tomato, onion, carrot, and celery - a staple on Guatemalan tables.
Ingredients:
  • 1.5 tablespoons vegetable oil
  • 1 cup long-grain rice
  • 1 tablespoon minced onion
  • 1 tablespoon minced tomato
  • 2 cups water
  • 2 tablespoons chopped carrot
  • 1 tablespoon chopped celery
  • 2 teaspoons chicken bouillon granules
Instructions:
  • In a large skillet over medium-high heat, sizzle the rice, onion, and tomato in hot oil until the rice is a lovely light golden brown, about 3 to 4 minutes.
  • Combine water, carrot, celery, and chicken bouillon in the skillet. Simmer until most of the liquid is absorbed, approximately 8 minutes. Cover and continue to simmer until rice is tender, about 5 to 8 minutes.
