Guilt-free chocolate gelato

Make guilt-free gelato at home without an ice cream machine with this easy recipe!
Ingredients:
  • 165g caster sugar
  • 5.00 gm cornflour
  • 5.00 gm good-quality cocoa powder, sifted
  • 375ml light evaporated milk
  • 60g dark chocolate chopped
  • 280g yoghurt
Instructions:
  • In a saucepan, combine caster sugar, cornflour, and cocoa powder. Stir in a splash of evaporated milk until a smooth paste forms. Gradually pour in the rest of the evaporated milk. Cook on low heat, stirring consistently until the mixture thickens. Add dark chocolate and stir until melted and the mixture is smooth. Take off the heat and let cool for 15 minutes.
  • Mix the chocolate mixture with yogurt and chill for 30 minutes. Spread the mixture in a wide shallow container and freeze until edges are frozen. Take it out, use electric beaters to give it a good mix. Return to the container and freeze. Repeat this process 2 or 3 times, then freeze for 4 hours until firm. Or use an ice cream machine according to the instructions.
  • Top chocolate gelato with berry sorbet and a dollop of low-fat yoghurt, if preferred.
