Sugar free chocolate mud cake recipe

Indulge guilt-free in two slices of decadent sugar-free chocolate mud cake.
Ingredients:
  • 250.00 gm butter
  • 250.00 gm Monkfruit Classic Sweetener
  • 250.00 gm water
  • 2 whole eggs
  • 150.00 gm self raising flour
  • 375.00 ml plain flour
  • 32.50 gm cocoa powder
  • 200g dark unsweetened or no added sugar chocolate
  • 200ml full fat cream
  • 100g dark unsweetened or no added sugar chocolate
  • 40.00 gm Monkfruit Classic Sweetener
Instructions:
  • Pre-heat your fan-assisted oven to 160°C. Grease a 9-inch cake tin with butter to line the sides and base.
  • In a medium pot, melt the butter, chocolate, and classic sweetener together until smooth. Stir in the cocoa powder and water.
  • Combine the flours and sift them. Then, incorporate the whole eggs into the chocolate mixture and gently fold in the dry ingredients. Transfer the batter into the cake tin and bake for 50 minutes. Test the cake's doneness by inserting a wooden skewer; once it comes out clean, the cake is ready.
  • Remove the dessert from the tin and let it cool on a rack. Simmer the cream, chocolate, and sweetener in a pot over medium heat to make the ganache, making sure not to boil. Let the ganache cool until it thickens slightly.
  • Slice the cake horizontally to create two layers. Spread a quarter of the ganache on one layer, then place the other layer on top.
  • Evenly spread the remaining ganache over the top of the cake, allowing it to flow over the sides. Smooth it out to cover the entire cake. Refrigerate to let the ganache set before serving.
