Sugar-free chocolate muffins with chocolate avocado icing

Indulge guilt-free with decadent Sugar-Free Chocolate Muffins topped with creamy Avocado Chocolate Frosting.
Ingredients:
  • 225 (1 1/2 cups) plain flour
  • 30g (1/4 cup) cacao powder
  • 12.00 gm baking powder
  • 80g (1/2 cup) stevia for baking
  • 250ml (1 cup) buttermilk
  • 2 eggs
  • 4.40 gm pure vanilla extract
  • 100ml macadamia oil
  • 50g sugar free milk chocolate, chopped
  • 1 large ripe avocado, peeled and stone removed
  • 40.00 ml cacao powder, sifted
  • Liquid stevia, to taste
Instructions:
  • Preheat your oven to 180C (160C fan forced) and line a 12-hole muffin tin with paper cases that have a 80ml (1/3 cup) capacity.
  • In a big mixing bowl, sift together flour, cacao, and baking powder. Add stevia and mix well. In a separate bowl, whisk together buttermilk, eggs, vanilla, and macadamia oil. Combine wet and dry ingredients until just mixed. Gently fold in chopped chocolate.
  • Spoon the mixture into the muffin tin. Bake in the preheated oven for 20 minutes or until golden. Allow to cool on a wire rack.
  • In a food processor, combine avocado and cacao until smooth. Sweeten to taste with a few drops of stevia. Spread the icing over the cooled muffins.
