Indulge in decadent egg-free chocolate muffins for the whole family.
Ingredients:
  • 375g self-raising flour
  • 50g cocoa powder
  • 200g brown sugar
  • 1.25 gm bicarbonate of soda
  • 125g butter, melted
  • 250ml milk
  • 20.00 ml white vinegar
  • 200g dark chocolate, chopped
  • 125g butter, chopped
  • 80g icing sugar mixture
Instructions:
  • Preheat the oven to 180°C and prepare twenty-four 1/3 cup (80ml-capacity) muffin pans with paper cases.
  • In a large bowl, mix together flour, cocoa powder, sugar, and bicarbonate of soda, then create a well in the center.
  • Combine butter, milk, vinegar, and vanilla in a jug and whisk together until smooth. Pour the mixture into the center of the dry ingredients and gently stir with a wooden spoon until just combined. Divide the batter evenly among the prepared pans.
  • Place your creation in a preheated oven for 20 minutes or until a skewer inserted in the centers comes out clean. Once done, take it out of the oven and allow it to cool.
  • For the chocolate icing, melt the chocolate and butter in a heatproof bowl over simmering water. Stir for 3-5 minutes until smooth. Remove from heat and mix in the icing sugar until combined. Let it sit for 15-20 minutes to firm up. Beat with a wooden spoon until smooth and spread over each muffin. Serve promptly.
