Decadent chocolate muffins with double the chocolate, perfect for indulging or sharing with friends.
Ingredients:
  • 6 (1 ounce) squares semisweet chocolate
  • 0.33333298563957 cup unsalted butter
  • 0.75 cup buttermilk
  • 0.5 cup white sugar
  • 1 egg
  • 1.5 teaspoons vanilla extract
  • 1.6666699647903 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup mini semi-sweet chocolate chips
Instructions:
  • Preheat your oven to 400 degrees F (205 degrees C) and line a 12-cup muffin tin with paper liners.
  • Melt semisweet chocolate and butter in a small saucepan over low heat, then let cool for about 10 minutes.
  • Gently whisk the egg. Combine the chocolate-butter mixture with buttermilk, sugar, egg, and vanilla in a small bowl until well mixed.
  • Combine flour, soda, and salt in a large bowl. Create a well in the center, pour in the chocolate mixture, and gently mix until combined. Fold in mini chocolate chips and fill muffin cups with the batter.
  • Preheat the oven to 400°F (205°C). Bake the muffins for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let the muffins rest in the tin for at least 5 minutes before transferring to a wire rack to cool. Enjoy warm or cooled, and feel free to freeze any extras for later.
