Surprise Chocolate Chip Muffins

Indulge in chocolate chip muffins with a delicious cream cheese filling surprise!
Ingredients:
  • 1 package (3 oz) cream cheese, softened
  • 1 tablespoon sugar
  • 1 tablespoon milk
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 cup miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 400°F. Grease only the bottoms of 12 regular-size muffin cups with shortening or spray, or line with paper baking cups. In a small bowl, combine all filling ingredients until smooth; set aside.
  • Combine milk, oil, and egg in a large bowl and whisk together. Gently fold in the rest of the muffin ingredients until just combined. Divide the batter evenly among muffin cups.
  • Add a generous teaspoon of filling on top of the batter in each muffin cup, then cover with the remaining batter.
  • Bake for 20-25 minutes until golden brown, then promptly transfer from pan to cooling rack (use a knife to loosen muffins if necessary). Let cool for 5 minutes before serving warm or at room temperature.
