Creamy chocolate mousse

Indulgent and velvety chocolate mousse with a guilt-free twist.
Ingredients:
  • 150g dark chocolate, chopped
  • 375.00 ml low-fat vanilla yoghurt
  • 20.00 gm boiling water
  • 3.00 gm gelatine powder
  • 300g reduced-fat ricotta cheese
  • sliced strawberries, to serve
Instructions:
  • Combine the chocolate and 1/2 cup yoghurt in a heatproof, microwave-safe bowl. Microwave uncovered on low (30%) for 1 to 2 minutes, pausing every 30 seconds to stir with a metal spoon until the mixture is smooth and the chocolate has melted.
  • Pour boiling water into a heatproof cup and sprinkle gelatin over it. Use a fork to stir until the gelatin is completely dissolved. Let it cool slightly before adding it to the chocolate mixture. Stir well to combine.
  • With an electric mixer, whip together ricotta and the rest of the yogurt until velvety. Slowly incorporate the chocolate mixture and whip until silky.
  • Spread mixture evenly among 4 ramekins or cups. Chill for 2 hours or until firm. Garnish with strawberries before serving. Enjoy!
