Serve up a warm and comforting pumpkin beef stew for a festive Halloween meal the whole family will love.
Ingredients:
  • 6 pounds pumpkin with fairly straight sides
  • 0.75 pound lean ground beef
  • 1 teaspoon oregano
  • 0.25 teaspoon ground black pepper
  • 2 large stalks celery, diced
  • 0.5 medium green bell pepper, diced
  • 2 pounds mozzarella cheese, cubed
  • 16 ounces tomato sauce
  • 1.5 cups water
  • 1 (15.25 ounce) can corn, drained
  • 6 large mushrooms, sliced
  • 0.75 cup instant rice
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and line a rimmed baking sheet with heavy duty aluminum foil for easy cleanup.
  • Prepare the pumpkin by washing it thoroughly. Cut off the top at an angle to create a secure lid. Remove and discard the seeds and string from the inside.
  • In a large skillet over medium-high heat, brown and crumble beef with oregano, salt, and pepper for 5 to 7 minutes. Add onion, celery, and bell pepper; sauté for an additional 3 minutes. Stir in mozzarella cheese, tomato sauce, water, corn, mushrooms, and instant rice until well combined.
  • Transfer the skillet mixture into the pumpkin and cover with the lid.
  • Place in the preheated oven for approximately 1 hour. When ready to serve, scoop out some of the tender pumpkin flesh into each bowl.
