Roasted Halloween pumpkin seeds coated in sweet and spicy cinnamon chili seasoning.
Ingredients:
  • 1 cup raw cleaned whole pumpkin seeds
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon chili powder
  • 1 teaspoon white sugar
  • 1 tablespoon olive oil
  • 1 tablespoon white sugar
Instructions:
  • Preheat the oven to 250°F (120°C) for a perfectly controlled cooking environment.
  • Spread the pumpkin seeds in a single layer on a baking sheet and roast until golden and crispy, approximately 45 minutes. Transfer the roasted seeds to a spacious bowl.
  • Combine the cinnamon, chili powder, and 1 teaspoon of sugar in a bowl, then set it aside.
  • In a heavy saucepan over medium-low heat, combine olive oil and 1 tablespoon of sugar. Stir with a wooden spoon until the sugar caramelizes to a light golden brown color, being mindful not to let it burn.
  • Drizzle the rich caramelized sugar over the golden roasted pumpkin seeds and gently mix to evenly coat. Sprinkle the fragrant cinnamon-chili blend over the seeds and toss to ensure each seed is flavored to perfection.
