Transform Halloween pumpkin seeds into a delightful treat by roasting them with cinnamon, ginger, cumin, sugar, and a hint of cayenne for a crunchy, sweet, and spicy snack.
Ingredients:
  • 3 tablespoons white sugar
  • 0.25 teaspoon cumin
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 1 pinch cayenne pepper
  • 2 cups raw whole pumpkin seeds, washed and dried
  • 2 teaspoons salt, or to taste
  • 1 tablespoon olive oil
  • 2 tablespoons white sugar
Instructions:
  • Heat the oven to 300 degrees F (150 degrees C) and line a baking sheet with parchment paper.
  • Combine 3 tablespoons of sugar with the cumin, cinnamon, ginger, and cayenne pepper in a large bowl, and let it sit.
  • Spread the pumpkin seeds on the baking sheet, coat them in cooking spray, and season with salt. Roast in the preheated oven until golden brown, for 20 to 25 minutes.
  • In a large nonstick skillet over medium heat, heat oil and add toasted pumpkin seeds and 2 tablespoons of sugar. Stir until the sugar coats the seeds, about 2 to 3 minutes. Combine caramelized seeds with sugar-spice mixture in a bowl, toss to coat, and allow to cool.
