Caramelized Chili Shrimp

Spicy shrimp appetizer ready in 15 minutes!
Ingredients:
  • 1/2 cup sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon kosher (coarse) salt
  • 1 teaspoon chili powder
  • 1/8 teaspoon chipotle chili powder or ground red pepper (cayenne)
  • 1 clove garlic, finely chopped
  • 1 lb uncooked large shrimp (21 to 30 shrimp), peeled with tails left on, deveined
  • 1/4 medium fresh lime
Instructions:
  • Preheat oven to a sizzling 500°F. Prepare a 15x10x1-inch pan by lining it with foil and spraying the foil with cooking spray.
  • Combine all ingredients, excluding shrimp and lime, in a resealable 1-gallon food-storage plastic bag. Add shrimp to the bag, seal, and shake well to ensure shrimp is evenly coated with the sugar mixture. Arrange shrimp in a single layer in a pan with the sugar mixture.
  • Bake for 7 to 9 minutes until sugar is caramelized. Take out of oven. Flip shrimp with a pancake turner, drizzle lime juice over shrimp. Transfer to serving platter and serve promptly.
