Caramelized chicken and peppers in a zesty ginger-soy sauce for a delicious twist on Spicy Caramel Chicken.
Ingredients:
  • 2 tablespoons finely grated fresh ginger
  • 4 cloves finely minced garlic
  • 0.75 cup light brown sugar
  • 0.33333334326744 cup rice vinegar
  • 0.33333334326744 cup fish sauce
  • 2 teaspoons hot pepper sauce, or to taste
  • 1 teaspoon soy sauce
  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 0.5 cup sliced, seeded jalapeno peppers
  • 0.5 cup sliced, seeded mild red chilies or bell peppers
  • 0.5 cup roasted peanuts
  • 0.5 cup chopped green onions, plus more for garnish
  • 0.25 cup chopped fresh cilantro leaves
  • 4 cups cooked white rice
Instructions:
  • Combine grated ginger, garlic, brown sugar, rice vinegar, fish sauce, hot sauce, and soy sauce in a spacious bowl, whisk until well blended.
  • In a bowl, combine chicken chunks with 1/4 cup of the sauce. Ensure all chicken pieces are evenly coated. Let marinate for 15 minutes.
  • In a heavy skillet, heat vegetable oil over high heat until it begins to smoke. Add chicken chunks in a single layer and cook until they caramelize and turn deep brown, about 8 to 10 minutes. Reduce heat to medium and stir in sliced jalapeno, red peppers, peanuts, and green onions for 1 minute. Pour in the rest of the sauce and simmer until heated through for 1 to 2 minutes. Remove from heat.
  • Fold in fresh cilantro for a burst of flavor. Spoon over steaming cooked rice and garnish with chopped green onions for a colorful finish.
