Spicy caramel popcorn clusters: Simply mix chili powder into caramel sauce, coat popcorn, and enjoy for any occasion!
Ingredients:
  • 1 cup roasted peanuts
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon sugar
  • 1/2 teaspoon cayenne pepper
  • 1/3 cup popcorn
  • 3 tablespoons canola oil
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup light corn syrup
  • 1/2 teaspoon baking powder
Instructions:
  • Prepare the ingredients: Place roasted peanuts in a large bowl, as you will incorporate the popcorn later. Combine salt, chili powder, sugar, and cayenne in a separate small bowl for the spice mixture. Line a baking sheet with parchment paper and keep it nearby.
  • Prepare the popcorn: Heat canola oil in a large pot over medium heat. Test the oil temperature by adding one popcorn kernel. Once it pops, remove it and pour in all the popcorn. Cover and wait for 30 seconds off the heat, then return to heat. Shake pot while popping until there are a few seconds between pops. Remove from heat and mix with peanuts in a large bowl.
  • Prepare the caramel: In a medium pot over medium heat, melt the butter. Stir in the brown sugar and corn syrup until well combined. Cook for 6 to 8 minutes until the mixture thickens and coats the back of a rubber spatula. Add half of the spice mixture and baking powder to the caramel sauce. Stir thoroughly to combine.
  • Quickly pour the hot caramel over the popcorn and peanuts, stirring vigorously to coat evenly.
  • Chill the popcorn: Lay out the popcorn on a parchment paper-lined baking sheet. Press down gently with a rubber spatula to create an even layer. Sprinkle with the remaining spice mixture. Once slightly cooled, shape into balls or leave as freeform clusters. Store in an airtight container at room temperature for up to a week.
