Flavorful yeast rolls with caramelized onions and spicy red pepper filling.
Ingredients:
  • 1.5 (.25 ounce) packages active dry yeast
  • 1 cup warm water (100 to 110 degrees)
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 tablespoon butter, room temperature
  • 1 tablespoon dry milk powder
  • 1 egg, beaten
  • 4 onions, thinly sliced
  • 4 tablespoons butter
  • 0.5 teaspoon crushed red pepper
Instructions:
  • In a bowl, mix warm water with dissolved yeast and 1 tablespoon of sugar. Add 1 teaspoon of salt, 1 tablespoon of butter, 1 tablespoon of powdered milk, and 2 cups of all-purpose flour. Incorporate beaten egg and proofed yeast water. Knead for 10 minutes, adding extra flour as necessary.
  • Place the dough in a lightly greased bowl and cover it with greased plastic wrap. Allow it to rise until doubled in size, approximately 1 hour.
  • In a skillet over medium heat, melt 4 tablespoons of butter until sizzling. Sauté the onion until soft and translucent for about 5 minutes. Lower the heat to medium-low and keep stirring until the onion is deeply caramelized for another 15-20 minutes. Finally, add the red pepper and mix well.
  • Preheat your oven to a toasty 350°F (175°C) and prep your baking sheet with a touch of grease or parchment paper.
  • Place the dough on a floured surface and shape it into a rectangle. Cover the dough with greased plastic wrap and let it rest for around 10 minutes. Roll out the dough into a larger 1/2-inch thick rectangle. Spread the onions evenly over the dough, then roll it up tightly into a log shape. Using a sharp knife, slice the log into pinwheels.
  • Arrange rolls on the baking sheet and allow them to rise for another 30 minutes. Bake in the preheated oven until beautifully golden, around 10 minutes.
