Delicious haloumi and tomato tart, great for a light lunch or outdoor dining.
Ingredients:
  • 1 sheet (25 x 25cm) ready-rolled frozen butter puff pastry, just thawed
  • 85g (1/3 cup) bought basil pesto
  • 4 small vine-ripened tomatoes, thickly sliced
  • 1 x 240g pkt haloumi, thickly sliced
  • Small fresh basil leaves, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with non-stick baking paper.
  • Cut the pastry sheet into quarters, then trim a 5mm-wide strip from the edges of each sheet. Brush the edges of the pastry lightly with water, and attach the strips to create a border. Transfer the pastries to the baking tray.
  • Spread a generous layer of flavorful pesto on each pastry sheet, staying within the edges. Place slices of juicy tomato and savory haloumi on top. Drizzle with a touch of oil and add a sprinkle of freshly ground pepper. Bake in a preheated oven until the pastry is beautifully puffed and golden, usually around 15 minutes. Once done, take it out of the oven and enjoy the tempting aroma.
  • Transfer tarts to a serving platter and garnish with fresh basil leaves. Serve promptly alongside mixed salad leaves, if preferred.
