Ham and Arugula Open-Face Sandwiches

"Quick and elegant open-face sandwiches with arugula, radishes, and savory ham for a delightful meal for two."
Ingredients:
  • 2 tablespoons reduced-fat mayonnaise or salad dressing
  • 1/2 teaspoon prepared horseradish
  • 1/2 teaspoon white wine vinegar or white vinegar
  • Dash pepper
  • 2 slices whole-grain rye bread
  • 1/4 lb thinly sliced cooked ham (from deli)
  • 1/4 cup firmly packed arugula or spinach leaves
  • 2 radishes, sliced (2 tablespoons)
Instructions:
  • Combine mayonnaise, horseradish, vinegar, and pepper in a small bowl. Spread approximately 1 tablespoon of the mayonnaise mixture on each slice of bread.
  • Alternate slices of savory ham and peppery arugula on top of the bread, then add a layer of crisp radish slices to finish.
