Easy and nutritious vegetable bake bursting with flavor.
Ingredients:
  • 0.5 cup chopped green bell peppers
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped onion
  • 0.67 cup whole kernel corn, drained
  • 0.5 cup frozen green peas, thawed
  • 0.33 cup green beans, drained
  • salt and pepper to taste
  • 2 cups low-fat cottage cheese
  • 3 egg whites
  • 1 cup finely diced smoked ham
  • 0.25 cup chopped green onions
  • 0.5 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and lightly grease a 9x13 inch baking dish for a perfect start to your dish.
  • Combine green bell pepper, red bell pepper, onion, corn, peas, and green beans in a large bowl. Season with salt and pepper. Mix in cottage cheese and egg whites. Transfer mixture to a baking dish. Sprinkle ham and green onion on top, then add cheese.
  • Bake until the center is firm, around 40 to 60 minutes in a preheated oven.
