Very Veggie, Ham, and Gruyere Quiche

Cheesy ham and veggie quiche with crispy potato crust. Perfect for breakfast or brunch.
Ingredients:
  • 7 large eggs
  • cooking spray
  • 1 pound frozen shredded hash browns, thawed
  • 0.25 cup salted butter, melted
  • 0.5 cup chopped red bell pepper
  • 0.5 cup chopped fresh mushrooms
  • 3 medium scallions, chopped
  • 0.25 teaspoon salt, divided
  • 0.25 teaspoon ground black pepper, divided
  • 0.5 cup fresh spinach, chopped
  • 0.25 cup heavy cream
  • 1 cup shredded Gruyere cheese, divided
  • 3 slices Gruyere cheese
  • 1 cup diced cooked ham
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C, if you're feeling fancy) and give your 9-inch quiche or pie pan a spritz with some cooking spray.
  • Lay out the thawed, shredded hash browns on paper towels and gently press down with another paper towel to squeeze out any extra moisture.
  • Spread hash browns in pan, pressing firmly to create a crust. Brush with melted butter inside and out, then press again using parchment paper to ensure a seamless crust.
  • Bake the crust in the preheated oven until lightly browned, for 15 to 20 minutes. Adjust as needed by adding extra 5-minute increments. Then, reduce the oven temperature to 375 degrees F (190 degrees C).
  • While the crust bakes, melt 1 tablespoon of butter in a small skillet. Sauté the red bell pepper, mushrooms, and scallions until tender, stirring frequently, for about 4 to 5 minutes. Season with 1/4 teaspoon salt and pepper. Stir in chopped spinach and cook until just wilted, about 1 to 2 minutes. Set cooked vegetables aside to cool.
  • In a medium mixing bowl, whisk together eggs, cream, salt, and pepper. Gently fold in cooked vegetables and 1/2 cup of shredded Gruyere cheese.
  • Layer sliced Gruyere to fit the bottom of the baked crust. Scatter diced ham over the cheese, then pour over the egg mixture. Finish by sprinkling the remaining shredded Gruyere on top.
  • Bake the quiche in the preheated oven until the center is set and a knife comes out clean, which should take 30 to 35 minutes. Let it cool on a rack for about 15 minutes, then slice and serve warm or at room temperature.
