Very Veggie Pizza Pie

Vegetarian pizza pie made with Bisquick Heart Smart® mix - quick 45-minute cheesy veggie delight!
Ingredients:
  • 1 package (8 oz) sliced fresh mushrooms (3 cups)
  • 1 small zucchini, sliced (1 cup)
  • 1 medium bell pepper, sliced
  • 1 clove garlic, finely chopped
  • 2 cups Bisquick Heart Smart® mix
  • 1/4 cup process cheese sauce (room temperature)
  • 1/4 cup very hot water
  • 1/2 cup pizza sauce
  • 3/4 cup shredded reduced-fat mozzarella cheese (3 oz)
Instructions:
  • Preheat oven to 375°F and generously coat a cookie sheet with cooking spray.
  • Spray a 10-inch skillet with cooking spray and heat over medium-high. Cook mushrooms, zucchini, bell pepper, and garlic for about 5 minutes until vegetables are crisp-tender, stirring occasionally. Remove from heat and set aside.
  • Combine Bisquick mix with cheese sauce and hot water in a medium bowl until a soft dough forms. Roll out the dough on a surface dusted with Bisquick mix, then knead until smooth, about 5 times.
  • Place the dough on a baking sheet and shape it into a 14-inch round. Spread pizza sauce over the dough, leaving a 3-inch border. Add the vegetable mixture on top, then sprinkle with mozzarella cheese. Finally, fold the edges of the dough over the filling.
  • Bake until the crust is golden brown and the cheese is bubbly, about 23 to 25 minutes.
