Savory ham and egg casserole with veggies and cheese - a simple, delicious breakfast for a group.
Ingredients:
  • cooking spray
  • 12 eggs
  • 0.5 cup milk
  • 0.5 cup sour cream
  • 0.5 teaspoon salt
  • 1.75 cups chopped cooked ham
  • 0.75 cup chopped red bell pepper
  • 0.75 cup sliced fresh mushrooms
  • 0.75 cup sliced green onion
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously coat a 13x9-inch baking dish with cooking spray.
  • In a large bowl, vigorously whisk together eggs, milk, sour cream, and salt until thoroughly combined. Stir in the ham, bell peppers, mushrooms, and green onion, then pour the mixture into the baking dish.
  • Bake in the oven until a knife inserted in the center comes out clean, around 50 minutes. Sprinkle with Cheddar cheese on top; return to oven until melted, about 3 minutes.
