Ham and leek mini quiches

Delicious ham and leek quiches - a must-try dish that is both savory and satisfying!
Ingredients:
  • 3 sheets frozen ready-rolled shortcrust pastry, partially thawed
  • 9.20 gm olive oil
  • 1/2 small leek, trimmed, halved, washed, finely chopped
  • 50g shaved leg ham, finely chopped
  • 5.90 gm wholegrain mustard
  • Salt, to season
  • 63.13 gm pure cream
  • 62.50 ml finely grated parmesan cheese
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Cut 24 rounds from the pastry using a 7cm-round cutter, and gently press them into two 12-hole patty pans with 1 1/2 tablespoon-capacity round bases.
  • In a frying pan over medium-high heat, warm oil. Add leek and cook, stirring occasionally, for 4 minutes until softened. Remove from heat and stir in ham and mustard. Allow to cool.
  • Prepare the egg mix by combining eggs, cream, and cheese in a large jug. Whisk everything together until well combined. Season with salt and pepper. Spoon the ham mixture into the pastry cases, followed by the egg mix. Bake in the oven for 12 to 15 minutes until golden and set. Serve and enjoy!
