Whip up a colorful couscous salad with ham, pineapple, onions, and peas, dressed in a sweet pineapple juice and Dijon mustard vinaigrette.
Ingredients:
  • 1 cup water
  • 2 tablespoons butter
  • 0.5 teaspoon garlic powder
  • 1 cup couscous
  • 4 ounces cooked ham, cut into 1/2 inch pieces
  • 1 (8 ounce) can pineapple chunks, juice reserved
  • 0.5 small red onion, sliced
  • 1 cup frozen green peas, thawed
  • Dijon-style prepared mustard
  • 1 tablespoon vegetable oil
  • salt and pepper to taste
Instructions:
  • Bring water, butter, and garlic powder to a boil in a saucepan. Remove from heat, add couscous, cover, and let sit for 5 minutes. Fluff with a fork and allow to cool.
  • Combine couscous, savory ham, sweet pineapple, crisp onion, and tender peas in a generous mixing bowl.
  • Whisk 1/4 cup reserved pineapple juice, lemon juice, Dijon-style mustard, and vegetable oil in a small bowl. Drizzle over the salad, toss to coat, and season with salt and pepper to taste.
