Cozy up with comforting creamy ham and sweet potato soup, a winter family favorite.
Ingredients:
  • 5 cups chicken stock
  • 3.5 cups peeled and diced sweet potatoes
  • 0.75 cup diced cooked ham
  • 0.33333334326744 cup diced celery
  • 0.33333334326744 cup finely chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.25 cup chopped carrot
  • 0.25 cup corn
  • 1 tablespoon chopped garlic
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley flakes
  • 1 teaspoon ground black pepper, or to taste
  • 5 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 2 cups milk
  • 0.75 cup shredded Cheddar cheese
Instructions:
  • In a stockpot, simmer the chicken stock, sweet potatoes, ham, celery, and onion until sweet potatoes are tender, about 10-15 minutes. Add bell pepper, carrot, corn, garlic, basil, parsley flakes, black pepper, and salt. Simmer until vegetables are softened, about 5-10 minutes.
  • In a saucepan, melt the butter over gentle heat. Whisk in the flour using a fork until thickened, about 1 minute. Gradually add the milk to the butter-flour mixture, stirring until smooth. Cook over low heat for 4 to 5 minutes until thickened. Stir in the Cheddar cheese until melted and smooth.
  • Combine the creamy milk-Cheddar cheese mixture with the soup and continue cooking until it thickens and is heated through, approximately 5 minutes.
