Low-fat, quick veggie fritters: crispy perfection!
Ingredients:
  • 500g orange sweet potato, peeled, grated
  • 200g shaved leg ham, chopped
  • 5 green onions, thinly sliced
  • 125.00 ml chopped fresh flat-leaf parsley leaves
  • 23.40 gm dijon mustard
  • 82.50 ml plain flour
  • 1 large egg, lightly beaten
  • 18.20 gm olive oil
  • Salad (see note), to serve
  • Tomato chutney, to serve
Instructions:
  • Preheat your oven to 170C/150C fan-forced. Set up a wire rack over a baking tray that is lined with baking paper.
  • Combine potato, ham, onion, parsley, mustard, and flour in a large bowl. Season with pepper and mix well. Gently fold in the egg.
  • In a large non-stick frying pan over medium-high heat, heat half of the oil. Spoon 1/4 cup of the mixture into the pan and gently press to flatten. Cook each fritter for 3 to 4 minutes on each side until fully cooked. Transfer the cooked fritters to a prepared tray and keep warm in the oven. Repeat this process until you have a total of 12 fritters.
  • Garnish the fritters with a side of fresh salad and a dollop of flavorful chutney.
