Cozy up with a comforting, gluten-free ham bone and bean soup using leftover ham for a quick and easy meal.
Ingredients:
  • 2 bay leaves
  • 1 (16 ounce) package 15-bean soup mix
  • 6 cups chicken stock
  • 1 ham bone with some meat
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 0.5 stalk celery, chopped
  • 1 tablespoon chopped garlic
  • 2 cups chopped ham
  • 2 tablespoons liquid smoke flavoring
  • 1.5 tablespoons ground mustard powder
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • In a large bowl, submerge bean mix in several inches of water and let it soak for a minimum of 24 hours. Drain well.
  • In a large pot, bring the chicken stock to a boil. Once boiling, add the soaked beans. Reduce heat and simmer for about 1 hour until beans are tender.
  • Bring the stock and beans to a vigorous boil and introduce the ham bone, onion, carrots, celery, garlic, and bay leaves. Lower the heat and simmer gently until the vegetables are tender, approximately 1 hour. Incorporate the chopped ham, liquid smoke, and mustard powder. Mix well and let simmer until flavors meld, about 30 minutes more.
  • Take out the ham bone from the soup and sprinkle with salt and pepper just before serving.
