Make a flavorful potato and bean soup with a leftover ham bone. Simply simmer with pantry staples for an easy and delicious addition to any meal.
Ingredients:
  • 6 cups water, or as needed
  • 3 cubes beef bouillon
  • 1 (10 ounce) meaty ham bone
  • 3 medium potatoes, peeled and cubed, or more to taste
  • 2 small onions, roughly chopped
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground cloves
Instructions:
  • Fill a large soup pot with water just enough to cover the ham bone. Bring to a boil without adding the bone yet.
  • Once the water is boiling, gently drop in the bouillon cubes and salt. Use the back of a spoon to crush the bouillon until it dissolves completely. Next, introduce the ham bone, potatoes, onions, kidney beans, turmeric, and cloves. Mix well to ensure all the spices blend together, then bring the mixture back to a boil.
  • Reduce the heat to medium-low and gently simmer until the ham is heated through and the potatoes can be easily pierced with a fork, approximately 1 hour.
  • Take out the ham bone, shred the meat, discard the bone, add the shredded meat back into the soup, and serve.
