Transform leftover ham bones into a cozy potato and corn chowder in the slow cooker for a comforting weeknight meal.
Ingredients:
  • 1 meaty ham bone, fat trimmed
  • 1 (32 fluid ounce) container chicken stock
  • 2 tablespoons chopped garlic
  • 6 red potatoes, cubed
  • 4 large carrots, chopped
  • 1 tablespoon chopped fresh parsley
  • 2 teaspoons ground cumin
  • 1 cup frozen corn
  • 1 cup milk
Instructions:
  • Add the ham bone to the slow cooker and cover it with chicken stock, onion, and garlic.
  • Slow cook for 6 to 8 hours on low heat.
  • Take out the ham bone from the slow cooker. Pull the meat off the bone, shred it, and add it back to the slow cooker. Remove the ham bone. Stir in the potatoes, carrots, parsley, and cumin until well combined.
  • Cook on High for about 45 minutes until the potatoes are tender, then add the frozen corn and stir.
  • Transfer 1 cup of soup to a blender. Pour in the milk, cover securely, and pulse a few times before blending until smooth. Pour the mixture back into the slow cooker, stirring thoroughly. Season with salt and pepper to taste.
