Quick and delicious split pea soup made with ham bone, onion, celery, carrots, and garlic for a hearty flavor explosion.
Ingredients:
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 4 stalks celery, diced
  • 0.5 large carrot, shredded
  • 0.33333334326744 white onion, diced
  • salt to taste
  • 3 cups split peas, rinsed
  • 3 cloves garlic, thinly sliced
  • 1 ham bone
  • 5 cups chicken stock
  • 2 cups water, or as needed
  • 1 cup diced ham
  • ground black pepper to taste
Instructions:
  • In a stockpot or Dutch oven over medium-low heat, melt butter with oil. Sauté celery, carrot, onion, and salt until tender, about 5 minutes. Stir in peas and garlic. Place ham bone in the pot and add stock and diced ham. Pour water until liquid is 1 1/2 inches from the top; bring to a boil.
  • Cover and simmer on low heat, stirring and scraping the bottom of the pot every 30 minutes, until peas are mostly disintegrated, about 2 1/2 hours. Occasionally turn ham bone and skim the surface for fat every hour.
  • Take the ham bone out of the pot and transfer it to a cutting board to cool. Once cooled, separate any meat from the bones, chop it into bite-sized pieces, and mix it into the soup. Season with salt and pepper to taste.
