Slow cook ham bone in vegetable soup for a comforting, bone-warming meal.
Ingredients:
  • 2 tablespoons bacon grease
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 3 stalks celery, diced
  • 2 cloves garlic, crushed
  • 3 potatoes, diced
  • 8 cups hot water
  • 8 cubes chicken bouillon
  • 1 ham bone
  • 1 (14 ounce) can diced tomatoes
  • 0.5 (16 ounce) package frozen corn
  • 1 (8 ounce) can tomato sauce
  • 1 teaspoon black pepper
Instructions:
  • In a large skillet over medium-high heat, sizzle the bacon grease until it's simmering. Sauté the onion, carrots, celery, and garlic in the savory grease until they are slightly tender and aromatic, for about 5 minutes. Add the potatoes to the mix and continue cooking until they turn golden, which should take about 10 minutes.
  • Combine hot water and chicken bouillon in a slow cooker until bouillon is fully dissolved. Mix in onion mixture, ham bone, diced tomatoes, corn, tomato sauce, black pepper, and salt.
  • Slow cook the soup for 4 to 6 hours on Low. Once done, let the ham bone rest until cool enough to handle. Remove the meat from the ham bone and stir it into the soup.
