Cheesy ham and potato casserole: perfect for breakfast or dinner!
Ingredients:
  • 6 small potatoes, peeled and cut into 1/2-inch cubes
  • 7 tablespoons butter, divided
  • 0.667 pound leftover cooked ham, cut into 1/2-inch cubes
  • 1 small onion, finely chopped
  • 3 tablespoons all-purpose flour
  • salt and ground black pepper to taste
  • 1 (8 ounce) package shredded Cheddar cheese
  • 0.25 cup bread crumbs
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, about 10 to 15 minutes.
  • Preheat the oven to 350°F (175°C) and grease a 1 1/2-quart baking dish.
  • Once the potatoes are nearly done, melt 3 tablespoons of butter in a skillet over medium heat. Cook and stir ham and onion until the onion is soft and translucent, about 5 minutes. Remove from heat.
  • After draining the potatoes, mix them with the ham mixture until well combined. Then, transfer the mixture to the baking dish.
  • In a saucepan over medium heat, melt the remaining butter. Whisk in the flour and stir until it turns into a light golden brown paste, about 5 minutes.
  • Whisk in milk slowly to the flour mixture, season with salt and black pepper. Cook and stir until thickened, around 2 minutes. Lower the heat to medium-low and melt in Cheddar cheese, stirring gently.
  • Drizzle the cheese sauce over the ham and potatoes, then sprinkle breadcrumbs on top.
  • Bake until the sauce is bubbling and golden brown, about 25-30 minutes in the preheated oven.
  • Serve while piping hot and savor every delicious bite!
