Ham Quiche

Microwave cornmeal quiche with cheesy egg filling.
Ingredients:
  • 1/3 cup milk
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1 tablespoon plus 1 teaspoon cornmeal
  • 1/8 teaspoon salt
  • 1 tablespoon plus 2 teaspoons shortening
  • 5 to 6 teaspoons water
  • 1/3 cup shredded mozzarella cheese
  • 1 medium green onion, finely chopped (1 tablespoon)
  • 2 eggs
  • 1/4 teaspoon salt
  • 6 drops red pepper sauce
  • 2 tablespoons finely chopped cooked ham
Instructions:
  • Combine flour, cornmeal, and 1/8 teaspoon of salt in a small bowl. Add shortening and mix until the mixture resembles small peas. Gradually add cold water and mix with a fork until all the flour is moistened and the dough comes together.
  • Form the pastry into a ball, then divide it in half. Press the dough firmly against the bottom and sides of two 10-ounce microwave-safe quiche dishes or custard cups. Use a fork to prick the bottoms and sides thoroughly. Sprinkle the cheese and onion inside the pastry shells.
  • Place the dishes on upturned saucers in the microwave. Microwave on High for 2 minutes, then rotate the dishes halfway. Prick any bubbles with a fork. Continue microwaving for 1 minute and 30 seconds to 3 minutes, or until the pastry looks dry and flaky.
  • In a 2-cup microwave-safe measuring cup, whisk together eggs, milk, 1/4 teaspoon salt, and pepper sauce. Add ham and mix well. Microwave uncovered on Medium-High (70%) power for 3 to 4 minutes, stirring after 1 minute, until warm. Stir again and pour into shells. Place filled shells on upside-down microwave-safe saucers in the microwave oven.
  • Microwave on Medium-High for 4 to 5 minutes, rotating dishes halfway through, until center is almost set. Cover loosely and let stand for 3 minutes on a flat, heatproof surface.
