Showcase this magnificent holiday ham on your festive spread.
Ingredients:
  • 5-6kg whole leg ham on the bone
  • 2.50 gm ground ginger
  • 1 tsp ground cardamom
  • 1 cinnamon quill
  • 250ml red wine
  • 200g brown sugar
  • 30-40 whole cloves, to decorate
Instructions:
  • Preheat your oven to a perfect 160°C. Gently strip the skin off the ham, leaving the flavorful fat intact. Lay the ham in a roasting pan. Lend it a cozy cover of foil, leaving ample room inside the pan to avoid contact with the ham. Let it bake for just 30 minutes.
  • In a pan, combine ginger, cardamom, cinnamon, wine, sugar, and 1 cup (250ml) water. Heat gently to dissolve sugar, then increase heat and simmer for 6-8 minutes until syrupy.
  • Take the ham out of the oven and remove the foil. Score the fat in a diamond pattern and press 1 clove into each diamond. Brush with half of the glaze and bake uncovered for 25 minutes until heated through and glazed. Simmer the remaining glaze on the stove until thickened, then brush over the ham. Place on a platter, carve, and serve with spiced pears.
