Autumn-perfect ham-filled biscuits with a rich brown mustard and butter drizzle.
Ingredients:
  • 1 package regular active dry yeast
  • 1/2 cup warm water (105°F to 115°F)
  • 2 cups buttermilk
  • 5 1/2 cups Gold Medal™ all-purpose flour
  • 1/4 cup sugar
  • 4 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 3/4 cup shortening
  • 1 cup butter, softened
  • 2 tablespoons finely chopped sweet onion
  • 2 tablespoons spicy brown mustard
  • 2 lb thinly sliced cooked ham
Instructions:
  • Prepare the cookie sheets by spraying them with cooking spray. In a 4-cup glass measuring cup, combine yeast and warm water, allowing it to sit for 5 minutes. Then, mix in the buttermilk.
  • In a large bowl, combine flour, sugar, baking powder, salt, and baking soda. Use a pastry blender or fork to cut in shortening until mixture resembles coarse meal. Stir in buttermilk mixture until dry ingredients are moistened.
  • Knead the dough briefly on a floured surface, then roll it out to 1/2-inch thickness and cut into rounds using a 2-inch cutter. Transfer the rounds onto cookie sheets, cover with plastic wrap and a cloth towel, and let rise in a warm place (80°F to 85°F) for 1 hour until doubled in size.
  • Preheat oven to 425°F. Remove the covering from the biscuits and bake for 10 to 12 minutes until they turn golden brown.
  • Combine butter, onion, and mustard in a small bowl until well mixed. Split warm biscuits and spread the cut sides with the butter mixture. Fill the biscuits with ham.
