Family favorite soup passed down from grandma, inspired by Depression era recipe. Customize with pearl onions and zucchini for a delicious twist.
Ingredients:
  • 3 cups water
  • 4 stalks celery, chopped
  • 1 pound ground beef
  • 2 (14.5 ounce) cans stewed tomatoes
  • 2 cups cubed potatoes
  • 0.75 cup uncooked white rice
  • 2 cups elbow macaroni
  • 1 teaspoon hot pepper sauce
Instructions:
  • In a large pot over medium-high heat, simmer celery in water until it boils gently. Gradually add ground beef. Reduce heat to medium-low and simmer for 10-15 minutes. Stir in stewed tomatoes with their liquid, potatoes, and other veggies. Cover, reduce heat to low, and simmer.
  • While the soup is simmering, boil water in a separate pot. Cook the rice and macaroni until slightly firm, then drain and add to the soup. Simmer for about 25 minutes until vegetables are tender. Serve hot with hot sauce on the side.
