Satisfying tomato hamburger soup with macaroni is perfect for a crowd. Pair with fresh salad and crusty bread for a complete meal.
Ingredients:
  • 1.5 pounds ground beef
  • 1 medium onion, chopped
  • 3 (14.5 ounce) cans diced tomatoes
  • 3 (14 ounce) cans beef broth
  • 3 (14 ounce) cans water
  • 6 medium carrots, cut into bite-sized pieces
  • 6 ribs celery with leaves, chopped
  • 6 sprigs fresh parsley, chopped
  • 1 bay leaf
  • 1 teaspoon chili powder, or more to taste
  • 0.5 teaspoon dried thyme
  • 2 cups uncooked elbow macaroni
Instructions:
  • In a large soup pot over medium-high heat, brown ground beef and onion until beef is crumbled and onion is translucent, about 5-7 minutes. Remember to drain any excess grease.
  • Combine diced tomatoes, beef broth, water, carrots, celery, parsley, bay leaf, salt, chili powder, and thyme in a pot. Simmer for 3-4 hours.
  • Cook the macaroni until perfectly al dente, stirring occasionally, for 8 to 10 minutes.
