Hard Times Creamed Tuna

Economical creamy tuna sauce over toast feeds four from one can of tuna.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups milk
  • 1 (5 ounce) can chunk light tuna in water, drained and flaked
  • salt and ground black pepper to taste
  • 4 slices bread, toasted, or to taste
Instructions:
  • Heat butter in a saucepan until melted. Stir in flour until smooth to make a roux. Gradually whisk in milk until thickened, about 5 minutes of simmering.
  • Reduce the heat to medium-low. Gently stir in the tuna to the creamy milk mixture and season with a pinch of salt and pepper. Cook until the tuna is heated through, about 2 to 3 minutes.
  • Top toasted bread with flavorful tuna mixture for a delicious presentation.
