Spicy harissa baked beans with bacon and sweet fruit for a summer twist.
Ingredients:
  • 3 slices bacon, coarsely chopped
  • 1 cup chopped onion
  • 3 (15 ounce) cans navy beans, rinsed and drained
  • 0.75 cup mild harissa paste or sauce
  • 0.5 cup water
  • 0.33 cup golden raisins
  • 2 dates, pitted and finely chopped
  • 0.5 teaspoon ground cumin
  • 1 tablespoon chopped fresh parsley, or to taste
  • 1 tablespoon sliced jalapeno pepper, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a large skillet over medium heat, crisp up the bacon until browned for about 10 minutes. Transfer the bacon to paper towels to drain, leaving 1/2 tablespoon of bacon drippings in the skillet.
  • In reserved drippings, sauté onion over medium-low heat until slightly softened for about 5 minutes. Stir in garlic and cook until fragrant, about 2 minutes.
  • Combine beans, zesty harissa sauce, water, sweet raisins, plump dates, aromatic cumin, and crispy cooked bacon in the skillet. Transfer the flavorful mixture into an 8-inch square baking dish.
  • Bake covered in the preheated oven for about 40 minutes until heated through and bubbly. Gently stir before serving and garnish with parsley and jalapeno slices.
