Delicious pita sandwiches - filled with chicken sausage, veggies, and goat cheese. Great for any meal!
Ingredients:
  • 1 cup peeled, seeded, and cubed butternut squash
  • 1 cup peeled and cubed sweet potatoes
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 links apple chicken sausage (such as Aidells®), thinly sliced and quartered
  • 4 eggs
  • 2 cups fresh baby spinach
  • 1 tablespoon red pepper flakes, or to taste
  • 1 cup canned black beans, rinsed and drained
  • 2 tablespoons goat cheese, or to taste
  • 2 large whole-wheat pita breads, toasted and halved
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C).
  • In a container, toss butternut squash and sweet potatoes with olive oil, salt, and pepper. Put on lid, shake vigorously to coat. Spread vegetables on a baking sheet.
  • Roast in the oven until vegetables are fork-tender, around 45 minutes.
  • In a large skillet over medium-high heat, brown the chicken sausage until cooked through, about 10 minutes. Lower the heat to medium-low, then add eggs, spinach, and red pepper flakes and cook until eggs are set, about 5 minutes. Stir in black beans and heat through for about 1 minute. Finish by adding goat cheese.
  • Stuff warm pita pockets with fluffy scrambled eggs and roasted veggies.
