Try this irresistible pineapple-carrot-walnut bread for a delicious breakfast or snack!
Ingredients:
  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 2 tablespoons canola oil
  • 1 egg
  • 1 1/4 cups whole wheat flour
  • 3/4 cup packed brown sugar
  • 1/2 cup raisins
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup shredded carrots (1 1/2 medium)
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F and generously grease an 8x4-inch loaf pan with shortening or cooking spray.
  • Combine pineapple with its syrup, oil, and an egg in a medium bowl. Mix in the rest of the ingredients until well combined, then spread the batter in the pan.
  • Bake for 50 to 55 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pan onto a cooling rack. Allow it to cool completely, approximately 1 hour, before slicing.
