Southern Fried Green Tomatoes

Crispy fried green tomatoes, perfect use for end-of-harvest unripened tomatoes. Dip in egg, coat in cornmeal and flour mixture, and fry till golden brown.
Ingredients:
  • 0.25 cup extra-virgin olive oil, or more as needed
  • 1 extra large egg
  • 4 tablespoons milk
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 3 green tomatoes, sliced 1/2 inch thick
Instructions:
  • Heat a generous amount of olive oil in a large skillet over medium heat.
  • In a shallow bowl, combine eggs and milk. In another shallow bowl, mix cornmeal and flour together.
  • Coat tomato slices in flavorful egg mixture, then cover each slice in cornmeal mixture for a crisp finish.
  • Fry tomatoes in batches until golden brown on both sides in hot oil.
