Crispy fried green tomatoes, perfect for snacking or adding a tasty twist to your BLT.
Ingredients:
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup yellow cornmeal
  • sea salt and ground black pepper to taste
  • 2 pounds green tomatoes, sliced
  • 1 cup canola oil for frying, or as needed
Instructions:
  • Prepare a baking sheet by lining it with waxed paper.
  • Place the flour in a shallow bowl. In another shallow bowl, whisk together the eggs and water. In a third shallow bowl, combine the cornmeal, salt, and pepper.
  • Coat each tomato slice with flour, then dip into the egg mixture. Press into cornmeal, shake off excess, and place on baking sheet. Arrange all slices in a single layer on the sheet.
  • In a large skillet over medium heat, shimmer 1/4 inch of canola oil. Fry tomatoes in batches until golden and crisp on both sides, about 3 to 4 minutes each. Drain on paper towels.
