A modern twist on a classic Jewish treat, these sweet and easy-to-make treats are perfect for getting kids involved in the kitchen.
Ingredients:
  • 3 yellow potatoes, peeled and grated
  • 1 large carrot, peeled and grated
  • 1 parsnip, peeled and grated
  • 1.5 cups grated butternut squash
  • 0.5 cup whole wheat flour
Instructions:
  • Preheat the oven to 400°F (200°C) and grease a baking sheet with cooking spray.
  • Combine potatoes, carrot, parsnip, and squash in a large bowl, ensuring an even mixture. Squeeze vegetables to separate juice, then transfer to a separate bowl and stir in cinnamon.
  • After 5 minutes, gently drain the juice from the first bowl, ensuring the starch coats the bottom. Mix the starch with egg and flour using a fork, then massage it through the shredded vegetables. Shape the mixture into 1-inch balls, flatten onto the baking sheet.
  • Bake the patties in the oven for 20 minutes until lightly browned around the edges, then flip and bake for an additional 5 minutes until golden brown.
