Dad's day delights: Golden hash browns and crispy bacon.
Ingredients:
  • 8 bacon rashers
  • 4 ripe egg tomatoes, halved lengthways
  • 3 desiree potatoes, peeled, grated
  • 70g (1/2 cup) frozen corn kernels
  • 40.00 ml chopped fresh basil
  • 125ml (1/2 cup) vegetable oil
Instructions:
  • Preheat the oven to 200°C. In a roasting pan, arrange the bacon and tomato, then generously drizzle with olive oil. Roast in the oven for about 10 minutes, or until the bacon is nice and crispy. Lower the oven temperature to 100°C before proceeding.
  • Squeeze excess moisture out of the potato using your hands in a colander. Move to a bowl and mix in corn and basil. Season with salt and pepper.
  • 1. Heat vegetable oil in a non-stick frying pan until shimmering. Spoon one-quarter of the potato mixture into the pan, press into a 10cm disc, and cook for 4-5 minutes per side until crispy. Keep warm in the oven on a heatproof plate. Repeat with remaining mixture in 3 more batches.
  • Arrange the hash browns, bacon, and tomato on individual serving plates for an elegant presentation.
