Hash browns with bacon and roasted tomatoes

Delight Dad with golden hash browns and crispy bacon for a special treat.
Ingredients:
  • 8 bacon rashers
  • 4 ripe egg tomatoes, halved lengthways
  • 3 desiree potatoes, peeled, grated
  • 70g (1/2 cup) frozen corn kernels
  • 40.00 ml chopped fresh basil
  • 125ml (1/2 cup) vegetable oil
Instructions:
  • Preheat your oven to 200°C. Arrange the bacon and tomato in a roasting pan, then generously drizzle olive oil over them. Bake for 10 minutes or until the bacon is crispy. Lower the oven temperature to 100°C.
  • Squeeze excess moisture out of the potato in a colander, then transfer it to a bowl. Mix in corn and basil, and season with salt and pepper.
  • Begin by heating vegetable oil in a non-stick frying pan until shimmering. Spoon a quarter of the potato mixture into the pan and shape into a 10cm disc. Cook each side for 4-5 minutes until golden and crispy. Keep warm in the oven on a heatproof plate. Repeat with the rest of the potato mixture in three more batches.
  • Arrange the hash browns, bacon, and tomato on individual serving plates for a visually appealing presentation.
